Description

Flavour cyclodextrin inclusion compounds are formed by encapsulating flavour molecules (e.g., essential oils, spices, aroma compounds) into the hydrophobic cavity of cyclodextrins (α‑, β‑, γ‑cyclodextrin or hydroxypropyl‑β‑cyclodextrin, etc.) via host–guest molecular inclusion. Cyclodextrins have a hydrophilic exterior and a hydrophobic interior that can accommodate flavour molecules. This technology significantly improves water solubility, stability against light, heat, and oxidation, provides controlled release, and can mask undesirable odours. The active flavour content in the complex is typically 6% to 15% (w/w).
