Description
Curcumin (Cur) is a hydrophobic polyphenol with weak water solubility and stability. It is complexed with hydroxypropyl-β-cyclodextrin (HP-β-CD) by grinding. Complexation increases solubility and improves photochemical stability. Inclusion occurs when both ends of curcumin are embedded into the HP-β-CD cavity. Curcumin has a more than 30-fold higher association constant with HP-γ-CD compared to HP-β-CD.
